Tainted Boar’s Head Meat Kills 6 More People in Listeria Outbreak

Six more people have died from listeria infections linked to Boar’s Head deli meat. Some of the brand’s products were recalled earlier this summer after they were found to contain listeria bacteria. A total of nine deaths have now been reported in New Jersey and 6 other states. In addition to deaths, 57 people have been hospitalized. Health officials advise Americans to check their freezers for the contaminated products. The ongoing outbreak is the country’s largest listeria outbreak since 2011.

Climate Change Will Fuel More Salmonella Infections, Research Shows

Climate change is expected to raise your risk of salmonella infections from eating tainted food, a new study finds. More hot and humid conditions will allow leafy green vegetables to develop bacterial diseases. These diseases help salmonella bacteria thrive in the crops, which heightens the risk of human infections from eating the produce. “The impact of increased humidity on healthy plants also supported salmonella’s survival on plants, which would make climate change a food safety issue,” explained the study’s author Jeri Barak, a professor of plant pathology at the University of Wisconsin-Madison. “Climate change will increase the risk of foodborne illness from consumption of raw produce.” This study builds on previous research showing that climate change will harm agriculture by increasing pests and diseases on farms.
